Eclair

The difference between Creampuffs and Eclairs is that one is round and the other is long. Eclairs are normally covered with chocolate or fondant.

Creampuffs

Following are a couple of photos of creampuffs that I made today. All cream puffs are made from scratch, meaning I don’t use mixes. This includes the pastry cream. The choux pastry (the base of the shell) is made from butter, water, flour, and eggs. The pastry cream is made with egg yolks, sugar, milk, and cornflour. The pastry cream is further lightened with whipping cream. Best consumed the day it is made. It can last three days in the fridge, wrapped with clingflim to ensure other smells do not contaminate the pastry cream.  I can confirm that the pastry cream filling will not turn hard like rocks if it were to be kept in the fridge.

I usually make everything the day of the order (even if it means that I don’t get any sleep!)
